14/21 How to Shop for Healthy Food.

This week’s show is called How to Shop for Healthy Food.  Allow Val to help guide you in eating real, whole foods. Learn how to shop for and cook foods as Nature intended us to eat; fresh, whole, natural, and as locally-sourced as possible. Quinoa Salad

imagesfff3 cups cooked quinoa (see recipe below for cooking instructions)

1 carrot, sliced

1 green onion, chopped

½ cup roasted sunflower seeds

Combine all ingredients and toss with vinaigrette dressing.  (You will not need to use all of the vinaigrette dressing recipes to cover salad; use about ¼-? cup of dressing for this salad).  To make a more complete meal, add cut-up cooked chicken, beef, sausage or cooked legumes.

To cook quinoa

Measure 1 cup of quinoa into a pot and fill the pot with cold water.  Using your hands, wash quinoa in the cold water by swishing it around.  Use a strainer to drain the quinoa.  Place quinoa back into the pot and add 1½ cups of cold water and  ½ teaspoon of sea salt.  You may also add 1 teaspoon of coconut oil for extra flavour and for good fats added to the diet.  Bring to a boil, reduce heat to low and cook for 14-16 minutes.  Quinoa should be light, fluffy and moist-looking when cooked.

Yields 3 cups of cooked quinoa.

Val’s Vinaigrette

? cup olive oil

½ cup lemon juice

? cup balsamic vinegar

3 tablespoons  maple syrup

2 teaspoons Dijon mustard

2 teaspoons dried basil

4 garlic cloves, crushed

salt, pepper to taste

Place all in a glass jar and shake.

She then returned to walk different sections of the Camino in Spain and France in 2010 and 2012, and last summer, walked solo along ancient earth energy lines in southwestern England, in the land of her ancestors.

Through her walks along sacred paths, Sarah re-connected with the deep strength of her feminine soul remembered the truth of who she is, and embraced her soul’s path.

Wendy K. Williamson

While studying at Virginia Tech, eight weeks before graduation, Wendy had her first manic episode. It was then she was diagnosed with bipolar disorder type I. She graduated and worked in a number of fields until being downsized from corporate America in her early thirties. It was then she plugged in her laptop for good and wrote her first book, a memoir: I’m Not Crazy Just Bipolar. Wendy has written for BP Magazine, Bipolar Disorder for Dummies, 2nd Edition and The Two River Times. She currently blogs for BPHope.com. Her book has been reviewed by Publishers Weekly and National Alliance on Mental Illness’ The Advocate. Wendy is the co-founder of The Red Bank Writers Group and has been interviewed on over thirty radio stations nationwide. She resides in Monmouth County, NJ with her two kitties and fiancé, burning out laptops to stay sane.

Honora Rose

Honora is a graduate of Boston University. Upon graduation, she worked in the financial industry for ten years before starting a family. She has a thirteen-year-old son and an eleven-year-old daughter. Not long after the birth of her second child, she was diagnosed with bipolar disorder type I, rapid cycling. At age thirty-five, Honora’s years of meteoric highs and crushing lows finally had a name and her journey to wellness was born. Honora is the co-founder of The Red Bank Writers Group, voracious reader and skilled editor.
