WHAT DOES BEING VEGAN MEAN FOR OUR ECOSYSTEM? 

It has long been understood by indigenous peoples that our relationship to Mother Earth is spiritually as well as physically sustaining. For indigenous peoples, this is often included in their way of life, and expressed through their daily rituals, even in the way they eat.

In Western culture, we may sense this spiritual nourishment once we depart from the material world and spend some time in the natural world just outside our door… we can feel Mother Earth’s beauty, peace, and we can find refuge in her no matter if it’s at the base of a waterfall or by following the flutter of a butterfly as it passes by. This spiritual nourishment is a quality of life rarely valued by our solely economic images of progress. And yet we are sustained and supported in ways we cannot easily measure with exacting science. In the words of Satish Kumar: “The contemporary environmental movement, in the main, follows the path of empirical science, rational thinking, data collection and external action. This is good as far as it goes but it doesn’t go far enough. We need to include care of the soul as a part of the care of the planet.”

The vegan lifestyle is one such way of both caring for our soul and our blessed Mother Earth, and its’ health benefits are far reaching. Simply put, when you are consuming only high vibrational foods (plant foods that have felt the sun’s rays and have come from Mother Earth with little to no processing in between harvesting and entering your body) then you yourself are sustaining the planet’s vibration as well as your own. All life on Earth comes from the sun. When the sun touches a plant on Earth, it creates a specific vibration. That vibration is what we then eat. The human body consumes this energy (the food is just the physical form which houses that energy). Food related to death or killing is in a lower vibration. Humans don’t need to eat these foods, we need to go back to where we were, in harmony with Earth and where the energy we consumed was not coming from dead animals. By eliminating the consumption of meats/dairy/fish/eggs (or any animal by-product) you are coming back to your own natural human form. Your human form constitution is energy and water, first and foremost. Think about all the plants that offer you their light energy and water! When you choose to consume only those types of foods, you become more like your Mother Earth. Other humans will sense this and they too will want to do the same. As we continue to transform, Mother Earth will heal and replenish herself, providing ample bounty for all human life to eat in a vegan way!

Have you ever found yourself in an intimate moment and your partner, for the life of him (bless his heart), simply could not… how can I say this delicately… activate the launch sequence? This can be a mortifying experience, and an abrupt dousing of a romantic flame, especially if your partner is still a relatively young man.
I was surprised by a question posed to me by my doctor. “Are you and your husband still having sex?” I was 54 at the time; my husband was 59. I looked at her like she was out of her mind, astonished that this was even a consideration.
Apparently, it is not uncommon for couples our age to just give sex up entirely. Over 30 million men in America suffer from erectile dysfunction and at some point in their lives, it affects 50% of all men. No wonder erectile dysfunction drug sales are skyrocketing and prominent men like former US Senator and Presidential Candidate, Bob Dole can be viewed gaping at Britney Spears’ shapely fanny in a Pepsi advertisement spoofing his own commercial for Viagra.
Is this inability to perform something that happens to most men after they’ve passed their sexual peak? This can really be a concern to young women faced with the prospect of one-day settling for a marriage doomed to the male aging process. Should we women resign ourselves to marriages bereft of the pleasures of the flesh? I once jested that there must be something in the water supply. Now there is a good reason to suggest there may be something in the food supply.
599892_495624367138908_1385436129_nA diet heavy in animal protein clogs the body’s blood vessels and arteries affecting not only the heart but all the intricate functions of the body. Cholesterol collects in our arteries creating a lessening of blood flow to the heart, to the brain, to the lungs, kidneys, liver and, dare I say, to the sexual organs as well. Simply put, adequate blood flow to the penis equals erections.
Our bodies produce a certain amount of cholesterol, in fact, all we need to function properly (according to T. Colin Campbell, The China Study). We ingest the excess in the form of animal protein; beef, poultry, dairy products, eggs, and seafood. We also ingest saturated fats found in animal products, which contribute to the cholesterol burden in our bodies. Plants contain no cholesterol and only a few plants, such coconut and coconut oil, cocoa butter, palm oil and palm kernel oil (which are found in abundance in processed foods) contain dietary saturated fat.
High blood pressure and diabetes are known factors contributing to erectile dysfunction. According to Dr. John McDougall (author of The McDougall Diet andThe Starch Solution), one can expect to eliminate high blood pressure on whole foods plant-based diet in as little as three weeks!
In his book, Dr. Neil Barnard’s Program For Reversing Diabetes, Barnard makes a case for a plant-based diet as a means of reversing diabetes. A host of disease processes can be improved or reversed simply by making the switch to a whole food vegan diet. There are over 30 years of sound research supporting these claims.

While not all erectile dysfunction issues are lifestyle related, it certainly is a reasonable place to begin. Simple changes in diet along with the inclusion of exercise into one’s lifestyle can produce great gains without the potentially harmful side effects of medication and the risks that go hand and hand with surgical interventions.
It is not all about tofu, salads, and wheatgrass. Foods from plants can be as varied and delicious, if not more so, than anything with hoofs, fins, and feathers. It’s also better for the planet and our vulnerable animal friends.
One way begin is to try eating out and ordering vegan Thai, Indian, Middle Eastern or Ethiopian dishes. They are chock full of flavour and high in nutrients. There are scores of vegan meet-up groups across the globe where one can become educated on a plant-based lifestyle and try dozens of vegan entrees and desserts for the cost of a pot-luck contribution. You can google vegan meet-ups to find one in your area.

A healthy, fulfilling sex life can be as close as your dining room table. (Yes, I’m fully aware of the double entendre.) To both, I ask, why not?

Danielle’s Vegan Fall recipe 

Steamed And Roasted Stuffed Acorn Squash

Stuffed acorn squash is fantastic any time but it is especially welcome during the Thanksgiving and Christmas holidays when turkey takes centre stage in many American homes. This dish is cooked mainly on top of the stove and for only the last 15 minutes in the oven. It not only cooks more quickly than baking or roasting alone, but I believe you end up with a more flavourful result. 

Time: 50 minutes

Yield: 2 halves, stuffed

Serves 2 as a main course, 4 as a side dish

Ingredients:

2 oranges, juiced with pulp

3 tablespoons maple syrup, divided

1 cup water

1 large organic acorn squash

1 large red delicious apple*, seeded and chopped into 1/4-inch cubes, (about 2 cups)

1/4 cup chopped walnuts

1/4 cup raisins, preferably golden organic

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Method: 35 to 50 minutes

Preheat oven to 375ºF

Prep time: 10 minutes

Stovetop: 15 to 25 minutes, depending on the size of your squash

Oven time: 10 to 15 minutes

  1. Cut acorn squash in half, from stem to pointed tip. With a spoon, scrape out all the seeds and seed pulp until there is a clean hollow where the seeds were.
  2. In a large covered skillet or saucepan, mix the water, orange juice, and 1 tablespoon maple syrup. Stir to combine.
  3. Arrange squash in pan, cut side down. Arrange the raisins in the pan around the squash. Cover and bring to a boil. Allow to boil on high until tender. (If the water boils away too quickly add a little more, 1/4 cup at a time.) This will take 15 to 25 minutes, depending on the size of your squash. When it is tender and can easily be pierced with a fork or bamboo skewer, remove the lid and allow most of the liquid to boil away. Do not allow the thick liquid or the raisins on the bottom of the pan to burn.
  4. While the squash is steaming, chop apples and toss with cinnamon, nutmeg, walnuts, and 2 tablespoons maple syrup. Set aside. Once the squash is tender, transfer to a casserole dish or other baking dish with sides. Turn the squash cut side up. Scoop the remaining liquid and the raisins out of the pan and add to the apple mixture. Fill the cavities in the acorn squash with this mixture.
  5. Roast, uncovered, in a preheated oven for 10 to 15 minutes. The apples should develop a caramel glaze and should still be firm. Do not allow to burn. Serve hot.

*Though Red Delicious isn’t typically a cooking apple, I like it in this recipe because it is sweeter than most apples and one of the most nutritious. Also because you are only wilting the apple rather than fully cooking it, it will continue to hold its shape and still have a little bit of a crunch.

Spicy Cranberry Chutney

This dish is sweet and sour and spicy all at the same time. Prepared with whole ingredients and sweetened entirely with fruit you can eat as much as you want of this guilt-free, healthy condiment.  Red delicious apples are best with this dish because they are the most sweet, and actually one of the most healthy apples on the market. They will melt into the sauce, which is fine since it is not important that the apple maintain its shape. The ginger and cayenne give this sauce its signature peppery tang. Enjoy it as a side dish, a condiment or even as a sandwich spread.

Yield: about 4 cups

Time: 45 minutes

Ingredients:

 12 ounces fresh or frozen whole cranberries

3 large red delicious apples, diced

1 large red delicious apple, puréed

8 large medjool dates, puréed

1 large orange, juiced (with pulp)

2 tablespoons orange zest

? cup raisins

3 tablespoons fresh ginger, finely minced

3 tablespoons fresh lemon juice

1 teaspoon ground cinnamon

½ teaspoon ground Jamaican allspice

? teaspoon cayenne pepper, optional

Purée one apple with the dates and orange juice, adding a little water if needed.

Combine all of the ingredients into a saucepan and simmer 25 minutes at medium temperature uncovered.

Serve hot or cold.

Can be used as a condiment, side dish or sandwich spread.

Profile 3Kate is a Welsh-born international traveller. She has spread her wings far and wide not only geographically but in every aspect of her life. Having graduated with a double Masters in Mechanical Engineering from French and English universities, Kate has had a diverse career path from having a career in fashion in Italy to working as a Divemaster in Mexico!? Until recently, Kate owned and operated a guesthouse and restaurant in the Blue Mountains of Australia. Only in 2013 did Kate decide to balance her life by taking care of her physical self and committed to the sport of triathlon.

Initially, struggling to run just 5km, she dedicated all her spare time into becoming a triathlete. Within eleven months of her first triathlon, Kate found herself on Australia’s age-group team and competed and won her age-group in the ITU World Championships and is currently World Champion in long-distance triathlon (4km swim, 120km cycle, 30km run).
