14/18 Healthy Oils with Val

Orinigally Aired May 5th-7th-9th at 6pm on Vibrational Eating with Val MacDonald.

Today on Vibrational Eating Val talks to us about healthy oils, and now here is Val’s vinaigrette recipe;  It’s super easy to make, and you will find that it has many uses.  I love making a batch of quinoa or brown rice, and tossing it with this dressing and adding cut up carrots, green onions and roasted sunflower seeds.  It is the ideal green salad dressing, and it can also be used as a marinade for chicken or fish.

So you take;

salad-nicoise-m½ cup lemon juice

?cup extra virgin olive oil

? cup balsamic vinegar

3-4 garlic cloves, minced

2 tsp Dijon mustard

3 Tbsp maple syrup

2 tsp dried basil

½ tsp salt, pepper to taste

Place all in a jar and shake thoroughly.

14/21 How to Shop for Healthy Food.

This week’s show is called How to Shop for Healthy Food.  Allow Val to help guide you in eating real, whole foods. Learn how to shop for and cook foods as Nature intended us to eat; fresh, whole, natural, and as locally-sourced as possible. Quinoa Salad

imagesfff3 cups cooked quinoa (see recipe below for cooking instructions)

1 carrot, sliced

1 green onion, chopped

½ cup roasted sunflower seeds

Combine all ingredients and toss with vinaigrette dressing.  (You will not need to use all of the vinaigrette dressing recipes to cover salad; use about ¼-? cup of dressing for this salad).  To make a more complete meal, add cut-up cooked chicken, beef, sausage or cooked legumes.

To cook quinoa

Measure 1 cup of quinoa into a pot and fill the pot with cold water.  Using your hands, wash quinoa in the cold water by swishing it around.  Use a strainer to drain the quinoa.  Place quinoa back into the pot and add 1½ cups of cold water and  ½ teaspoon of sea salt.  You may also add 1 teaspoon of coconut oil for extra flavour and for good fats added to the diet.  Bring to a boil, reduce heat to low and cook for 14-16 minutes.  Quinoa should be light, fluffy and moist-looking when cooked.

Yields 3 cups of cooked quinoa.

Val’s Vinaigrette

? cup olive oil

½ cup lemon juice

? cup balsamic vinegar

3 tablespoons  maple syrup

2 teaspoons Dijon mustard

2 teaspoons dried basil

4 garlic cloves, crushed

salt, pepper to taste

Place all in a glass jar and shake.

  • What it means to eat vibrationally.
  • How you can keep your energy levels up all day by eating the right foods, in the right amounts and at the right times of the day.
  • What causes food cravings and how you can best calm those cravings.
  • How to balance your blood sugar and satisfy your sweet tooth.

14/19 Eggs; an excellent choice!

Aired May 12th on Vibrational Eating with Val MacDonald

On this show, Val explores a few of the choices available to us when it comes to the selection and the quality of eggs.  She also debunks the common belief that eggs contribute to high cholesterol in the body.  And then at the end of the show, Val talks you through how to make the perfect soft-boiled egg!

downloadSo, first, you take a couple of large eggs. In a small pot on the stove, place only ½ an inch of water and bring this to a boil.  When it comes to a boil, place your eggs into the water.  I like to use tongs or a large spoon.  Gently place them into the water as if you place them too hard, they may crack.

Put the lid on the pot.  Now set a timer for 6 minutes.  If you’re using medium eggs, set the timer for 5 minutes.  After one minute, turn the stove down to low.  Allow timer to finish.  When finished, turn off the stove and remove your eggs.  You can serve them in egg cups or just in a bowl.  To open them, I find it easiest to crack them with the side of a spoon while they rest in a bowl.  Soft boiled eggs are great served with toast in the morning, with a little salt and pepper added, or they can be incorporated into your lunch by adding them to a salad or a sandwich.

Val experienced poor health in her 20’s and 30’s, largely due to eating too much sugar and refined foods, but also due to not understanding her body;  the ways it prefers to move, the importance of its’ relationship with the mind, and the physical and spiritual practices that both body and mind need in order to rejuvenate and restore.

What started as a journey of self-discovery for Val, has evolved into a passion for helping others discover their own path to wellness and inner peace.
